The only problem now is keeping it in storage. As much as I love the stuff, I do like to eat other things from time to time.
I decided to experiment and placed one of the wedges in a ziploc bag, removed as much air as I could and placed it in the freezer. I’m going to give it a month before I let it thaw and taste test.
I remember I froze avocados once. They lost their texture so as to be practically useless. We’ll see how the d’Affinois holds up.
